I was in line waiting at the store and grabbed a magazine and saw how they made diffrent stuffed zucchini’s. When I got home I had completely forgot how they made it and so I took the idea and made my own version with ingredients I had.
The first thing I did was cut the zucchini in half and just scraped out the seeds using a spoon. Then I sprayed the zucchini’s with a little canola oil and season with salt, pepper, and put them in my bamboo steamer. Covered for about 10 min’s
In a skillet I took a frozen Swai fish and covered till the fish looked flexible, I then chopped up the fish so that it was a little chunky, seasoned with salt and pepper and add some garlic and cook on med heat covered so that you keep the fish moist.
In a bowl I mixed the ceviche.
- Chopped tomatoes.
- onions, cilantro.
- lime juice.
- and olive oil and I let that sit for a few minutes.
The fish can sit off the heat for a few min and then added to the ceviche, to soak in all the juices, now you just fill your steamed zucchini’s with the ceviche and serve on a plate!
I served my dish with mashed potatoes, not really a good pair but the family wanted potatoes, so they got potatoes!
